Fire Up the Grill: The Perfect Pairing for Highland Harmony

Fire Up the Grill: The Perfect Pairing for Highland Harmony

Spring is knocking, the days are getting longer, and somewhere across the neighborhood, someone has already fired up their grill for the first time this year. That smell? That's the unofficial starting pistol of the season. And at Highland Falls, we think the only thing better than cracking open a cold Highland Harmony is having something spectacular on the grate to go with it.

Our Highland Harmony is bright, citrusy, and margarita-inspired — the kind of drink that makes you want to be outside with good people. So we built a recipe worthy of it.

🍋 Why This Pairing Works

Great food and drink pairings aren't accidental — they're intentional. Highland Harmony leads with bold citrus, a whisper of agave sweetness, and that clean, balanced finish you get from our 1:1 THC and CBG blend. So we designed a marinade that speaks the same language: triple citrus (lime, orange, and lemon), a touch of honey, fresh jalapeño for a little fire, and a cumin-chili backbone that gives it depth without stealing the show.

Every sip of Highland Harmony after a bite of this chicken is essentially a flavor echo — bright calling back to bright, citrus meeting citrus, heat meeting that smooth, easy finish. That's not a coincidence. That's a craft beverage doing exactly what it was designed to do.

🔥 The Recipe: Highland Harmony Grilled Chicken

Serves 4 | Prep: 15 min | Marinate: 2 hrs (overnight is better) | Grill: 12 min

The Marinade

  • ⅓ cup fresh lime juice
  • ¼ cup fresh orange juice
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 fresh jalapeño, finely diced
  • 1 tbsp honey
  • 1 tsp chili powder
  • ½ tsp ground cumin
  • 1½ tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp lime zest

The Chicken

  • 2 lbs boneless, skinless chicken thighs

To Finish

  • Flaky sea salt
  • Fresh cilantro, chopped
  • Lime wedges

How to Make It

1. Build the marinade. Whisk all marinade ingredients together in a bowl until combined. This is your Highland Harmony marinade — bright, citrusy, and just a little wild. Reserve a few tablespoons if you'd like a dipping sauce on the side (before the raw chicken goes in).

2. Marinate. Add the chicken thighs to a zip-lock bag or shallow dish and pour the marinade over the top. Seal and refrigerate for at least 2 hours — overnight is the move if you have the patience for it.

3. Preheat the grill. Heat to medium-high, around 425°F. Brush the grates with oil and let it fully preheat. A hot grill means better char, better flavor, better everything.

4. Grill. Remove chicken from the marinade and shake off excess. Grill 5–6 minutes per side until nicely charred and the internal temperature hits 165°F. Don't fuss with them — let the grill do its thing.

5. Rest. Transfer to a cutting board and let them rest for 5 minutes. This is non-negotiable. Those juices need a moment.

6. Finish and serve. Slice or serve whole. Hit them with a pinch of flaky sea salt, a handful of fresh cilantro, and a squeeze of lime. Pair immediately with an ice-cold Highland Harmony.

🌿 A Few Pro Tips Before You Flip

Go with thighs. We know, we know — some of you are breast people. But for this recipe, thighs win every time. They're more forgiving on the grill, stay juicy with bold acidic marinades, and develop a better char. Trust us on this one.

Overnight is always better. The longer the chicken sits in that citrus marinade, the deeper the flavor goes. If you can start it the night before, your future self will thank you.

Build a spread. This chicken was made for a spring table. Serve it over an avocado and grilled corn salad, tucked into warm tortillas, or alongside grilled asparagus. Make a day of it.

Double the marinade. Set half aside before the chicken goes in and use it as a dipping sauce. You're welcome.

Spring doesn't wait around, and neither should you. Grab your tongs, stock the cooler with Highland Harmony, and make this the season you eat — and drink — a little better.
